In the beginning, we can see Rosemary is a very insecure character, she is most likely used to being avoided or ridiculed because of her weight. We can understand why she is so surprised when Hal suddenly takes a liking to her, since she doesn't seem to be used to one being so nice towards her. Her disbelief mounts as Hal spends more time with her, but she eventually realizes that he really likes her for who she is (although in this case, he was still under the spell). She is happy to finally find someone that she can really be with, until the spell is broken. When she sees Hal ignoring her and possibly seeing another woman, she reverts to her insecure state and the love she had for him crumbles.
However, at the end of the movie, Hal comes to her after realizing she is beautiful on the inside. She rejects him at first, since she thinks he is only going to build her up and then break her down again, figuring it was just another joke all along. But Hal confesses that he truly loves her, and proves it by joining her on her Peace Corps mission. As Hal learns to follow his heart, Rosemary learns that there really is someone out there for everybody, no matter what.
If Rosemary was a friend of mine, I would encourage her to stick up for herself, and that personality trumps appearance. If you allow your good personality to shine through with confidence, you feel better about yourself and have a better outlook on life. Relationships are more than just obsessing over one's appearance, and understanding one's personality is what lets you find someone that you feel you can really be with.
Besides, in addition to her caring and sweet personality, I think she's beautiful on the outside too! Everyone is too critical of body type these days, honestly.
